Easter Cakes 2011: Sardinian cheese

Among the recipes for sweet Easter 2011, now are worth mentioning as a typical regional cheese the sardines. This is a fairly simple preparation, made with cream cheese or cottage cheese, very delicious, that in the whole island can be enjoyed on the occasion of Easter celebrations. Also called casadinas have variations depending on the area where the island is wrapped, but what I propose is the basic recipe, as in the genuine tradition older.

Ingredients Preparation In a large bowl, prepare the filling by mixing well with the cheese (or ricotta) with 200 g of flour, 1 egg and 3 reds, the grated rind of lemon and orange, saffron and sugar.

Create a smooth mixture and let stand aside. Now you have to make the dough. On a floured board, make a pyramid with the remaining flour (800 g) and mixed with warm water. Always working, add the remaining 3 egg whites, lard (or oil), and an idea of salt. When the dough is elastic, with a rolling pin or grandmother of the beautiful duck pull sheets thin enough.

So with the help of a saucer, cut out a number of discs with a diameter of about 10 cm. Now you have to make the cheese. Place a scoop of filling in the center of each disc, pinching the edges and then raised to the four corners. Take a baking sheet and sprinkle with flour, and Lie down the candy.

Bake at moderate heat (175 ° or so) and cook for about half an hour, until you see the filling becomes golden on the surface. Remove from the oven, let cool and decorate with a little honey, and if you like, so many devils colored.
